Taiwanese style 'nuoromein' (beef style noodles)

Udon noodles and oodles of tasty beef in a spicy Chinese style sauce make a lip smacking supper from Ching-He Huang
Ingredients
- 800 ml water
- 700g stewing steak, cut into pieces
- 5 clove Garlic, finely chopped
- 5 cm Ginger, finely chopped
- 1 large Onion, chopped
- 4 large Chillies, chopped
- 150g Carrots, chopped
- 50g Shallots, chopped
- 5 tbsp chillies, bean paste
- 8 tbsp Soy sauce
- 2 tbsp chilli oil
- 1 tsp Sugar
- 1 tsp Salt
- 1 tbsp Sesame oil
- 4 small Spring onions, chopped
- 1 small Coriander, bunch, chopped to garnish
For the noodles
- 400g Udon noodles, flat
- 2 tbsp vegetable oil
Method
1. Put all the ingredients except the noodles into a large saucepan and cook over a medium heat for 90 minutes, or until the beef is tender.2. Once the beef is tender, bring a large pan of salted water to the boil and cook the noodles for 3 minutes. Drain immediately and rinse the noodles briefly under cold running water to remover the starch.
3. Stir in the oil. Spoon the noodles into a dish and ladle over the beef. Scatter with coriander and serve immediately.
