Caramelised apricots passion fruit, berries and mint

Method

 

1. Heat the butter in a frying pan and as soon as it starts to sizzle, add the apricots. Fry them for 1 minute until well coloured.

2. Sprinkle over the sugar and let it caramelise until golden brown. Lower the heat and cook for a few more minutes until the apricots are caramelised but not too mushy.

3. Remove the apricots gently from the pan onto a tray and set aside.

4. Add the orange juice to the pan and boil, add the passion fruit pulp and boil again. Turn off the heat and transfer the apricots to a plate.

5. Peel the mango and cut it into little cubes. Place in a bowl and add the berries and the passion sauce.

6. To serve, put the apricots on a large serving platter, spoon over the sauce and fruit. Sprinkle with the chopped mint.

Ingredients

30g unsalted Butter
4 large Apricots, or 6 small firm apricots, halved and de-stoned
60g caster sugar
100ml orange, juice
4 passion-fruit, pulps
1 large Mango, peeled and diced
1 punnet Blackberries
1 punnet Strawberries
12 large mint leaves, chopped
