Chicken Spago with Green Beans and New Potatoes

Method

 
1. First, make the stuffing , Bring a small pan of water to the boil. Add in the garlic cloves and boil them, skin on, for 15 minutes. Drain and cool.

2. Peel the husks from the cloves and mash the garlic in a mixing bowl. Add in the parsley, olive oil, lemon juice, salt and freshly ground pepper and mix well.

3. Stuff the garlic mixture between the meat and skin of the breast and leg of each piece of chicken.

4. Preheat a barbecue until hot enough to cook on. Barbecue the stuffed chicken portions for 7-10 minutes on each side, until cooked through.

5. Serve with lemon wedges, green beans and boiled new potatoes.

Ingredients

2 chicken

For the stuffing

1 large head of garlic, separated into individual unpeeled cloves
2 flat-leaf parsley, bunches, finely chopped
2 tbsp Olive oil
1 lemon, juice
1 pinch salt and fresh ground black pepper
