Carnival punch cocktail

A twist on the traditional Caribbean punch from Wayne Collins - rum combined with exotic juices and basil, topped up with ginger beer
Ingredients
- 10 ml fresh lime juice
- 1 tbsp sugar syrup
- 25ml Mango, juice
- 25ml pineapples, juice, pressed
- 10ml Apricots
- 10ml rum, Puerto Rican
- 4 Basil, leaves, torn
- 3 ice cubes
- 150ml Ginger, beer,
Method
1. Place all the ingredients, in a cocktail shaker, with ice, shake well and strain into a sling glass.2. Top up with ginger beer and garnish with a pineapple leaf to serve.
