Lamb Cutlets in Coffee Sauce

Method

 
1. In a small pan melt the butter over a low heat, mix in the coffee, honey, Worcestershire sauce, spices and lemon juice. Cover and remove from the heat.

2. Melt the ghee in a large frying pan, fry the cutlets until they are browned on both sides. Return the sauce to the heat, add the prunes bring to the boil and pour over the cutlets.

3. Garnish the cutlets with the mint and serve with boiled rice.

Ingredients

25g Butter
75ml strong coffee
115ml clear honey
2 tbsp Worcestershire sauce
0.25 tsp ground mace
0.5 tsp ground cardamom
0.5 tsp ground cinnamon
1 tsp lemon, juice
30g Ghee
6 lamb cutlets
6 prunes, pitted
1 tbsp fresh mint, chopped to garnish
350g long grain rice, to serve
