This healthy take on a classic recipe brings home comfort cooking without the extra calories
Ingredients
- 450 g minced turkey
- 1 Onions, finely chopped
- 2 sticks Celery
- 2 Carrots, finely chopped
- 1 clove Garlic, crushed
- 7 tbsp Red wine
- 400ml chicken stock
- 12 sun-blushed tomatoes, finely chopped
- 1 handful tarragon, finely chopped
- 100ml extra virgin Olive oil
- 450g potatoes, cooked and mashed
- 2 tbsp Parsley, chopped
Method
1. Brown the turkey in a non-stick frying pan, over a medium heat, for 5 minutes, stirring occasionally. Remove from the pan.2. Fry the onion, celery, carrot and garlic in the frying pan for 6 8 minutes. Add the red wine and reduce by two thirds. Return the turkey to the pan, add the stock, tomatoes and tarragon and cook for 25 minutes. Divide among 6 individual heatproof pudding bowls.
3. Preheat the grill to high. To make the topping, heat the olive oil in a medium saucepan and add the warm mashed potato, beat well, season and add the parsley.
4. Add a layer of topping to each bowl of meat and brown under the grill for 2 3 minutes. Serve immediately.
