This healthy take on a classic recipe brings home comfort cooking without the extra calories

Method

1. Brown the turkey in a non-stick frying pan, over a medium heat, for 5 minutes, stirring occasionally. Remove from the pan.2. Fry the onion, celery, carrot and garlic in the frying pan for 6 8 minutes. Add the red wine and reduce by two thirds. Return the turkey to the pan, add the stock, tomatoes and tarragon and cook for 25 minutes. Divide among 6 individual heatproof pudding bowls.3. Preheat the grill to high. To make the topping, heat the olive oil in a medium saucepan and add the warm mashed potato, beat well, season and add the parsley.4. Add a layer of topping to each bowl of meat and brown under the grill for 2 3 minutes. Serve immediately.

Ingredients

  • 450 g minced turkey
  • 1 onions, finely chopped
  • 2 sticks celery
  • 2 carrots, finely chopped
  • 1 clove garlic, crushed
  • 7 tbsp red wine
  • 400 ml chicken stock
  • 12 sun-blushed tomatoes, finely chopped
  • 1 handfuls tarragon, finely chopped
  • 100 ml extra virgin olive oil
  • 450 g potatoes, cooked and mashed
  • 2 tbsp parsley, chopped

Great recipe. I found the texture and taste improved if the turkey and vegetable mix was left to cool for 30 minutes before adding the topping and then cooked in the oven for 20 minutes or until the top was brown and crispy and hot in the middle. I also added a few mushrooms to the mixture with the tomatoes.
