For real 'oat cuisine' try this fabulous fruity adaptation of Dr Bircher-Benner's original Swiss muesli

Cooks Tips...
The dish was invented by Dr. Bircher-Benner, the pioneer of food reform, for patients at his Zurich clinic. In the original recipe, the oats and water were soaked together overnight. I prefer to mix them not long before the meal, so that the oats are still crunchy.

Ingredients

  • 1 tbsp rolled oats
  • 3 tbsp water
  • 1 tbsp sweetened condensed milk, (or single cream and honey)
  • 1/2 Lemon, juice only
  • 1 peaches, or a few strawberries
  • 1 Apples
  • 1 tbsp nuts, e.g. almonds, walnuts, hazelnuts, cashews

Method

1. Place the oats into a bowl and stir in the water, condensed milk and lemon juice.


2. Chop the peach or halve the strawberries, grate the apple and quickly add to the oats before the apple has time to discolour.


3. Add the nuts and stir. Raisins make a good addition. Other fruit, including soaked dried fruit, can be substituted for peach or strawberries, but grated apple is essential to the texture.
