Juicy mushrooms, a lick of sweet honey and salty Gorgonzola make a tempting trio in this irresistible recipe from Gino D'Acampo

Ingredients

  • 16 large button mushrooms
  • 100 g honey
  • 300 g gorgonzola cheese, crumbled
  • salt, and freshly ground black pepper
  • 50 ml extra virgin Italian olive oil
  • 1 ciabatta bread, sliced

Method

1. Set the oven to 180°C/gas 4. Remove and discard the mushroom stalks. Rub some honey on the inside of the mushroom, and then stuff them with some Gorgonzola cheese.2. Arrange the mushrooms on a baking tray, season and drizzle with extra-virgin olive oil. Cook for 10 minutes.3. Toast the bread. Once the mushrooms are cooked, put 4 mushrooms on each of 4 plates and serve immediately with the warm bread.

I tried these at an Italian restaurant (Bari's, The Shambles, York) last week, and loved them so much I just had to find the recipe. I've just made them now to the recipe here and they turned out great. These will definitely become a favourite.
