For a great starter or light lunch, try Gino D'Acampo's simple salad of sweet pears, salty Parmesan and spicy rocket
Ingredients
Method
1. Peel the pears and slice them very finely. Arrange them on a large flat plate overlapping each other.2. In a small bowl dress the rocket salad with extra-virgin olive oil, and then season to taste.
3. Put a handful of salad in the centre of the plate. Shave the Parmesan on top and serve immediately.
