For a great starter or light lunch, try Gino D'Acampo's simple salad of sweet pears, salty Parmesan and spicy rocket

Ingredients

  • 3 large pears
  • handful of rocket salad
  • 1 tbsp extra virgin Italian Olive oil
  • Salt, and freshly ground black pepper
  • 200g Parmesan

Method

1. Peel the pears and slice them very finely. Arrange them on a large flat plate overlapping each other.

2. In a small bowl dress the rocket salad with extra-virgin olive oil, and then season to taste.

3. Put a handful of salad in the centre of the plate. Shave the Parmesan on top and serve immediately.
