Catalan chicken

Rustle up Mike Robinson's flavour packed Catalan style chicken for a speedy but special supper
Ingredients
- 1 Chicken breast
- 100ml Olive oil
- sprig Thyme
- handful of Spinach
- 1 cooked Spanish Sausages, sliced
- 1 red Onion, chopped
- 200g cannellini beans
- 150ml White wine
- 1 clove Garlic, chopped
- 4 Tomatoes, canned, chopped
Method
1. Lay the chicken breast in a shallow dish, pour over half of the olive oil and add the thyme. Leave to marinate for as long as possible, at least two hours.2. Heat the remaining olive oil in a saucepan and add the spinach, sausage, onion, beans, wine, garlic and tomatoes. Cook for five minutes.
3. Heat a ridged grill pan and cook the chicken for five minutes on each side, or until cooked through.
4. Pile the bean mixture onto a plate and top with the chicken breast.
