Tempting, tasty and oozing with Tapas style goodies, this deliciously different bread from Paul Hollywood is a real winner
Ingredients

- 500g strong bread flour
- 12g Salt
- 25g Yeast
- 30ml Olive oil
- 290 ml warm water
- 1 Egg, beaten
- grated Parmesan
A selection of Mediterranean style vegetables in olive oil to include
- Chillies
- avocados
- Peppers
- borretane Onions
- grilled Tomatoes
- Porcini
- Feta cheese, and roasted sweet red pepper
A selection of cheeses to include
- Mozzarella
- Gruyère cheese
- Parmesan
- Cheddar cheese
- brie
Method
1. Sieve the flour and salt into al large bowl. Add the yeast and olive oil, and enough water to form a smooth, pliable dough.2. Turn the mixture onto a floured work surface and knead for 5 minutes. Return the dough to the bowl, cover with cling film and then leave to rest for 1 hour.
3. Lightly grease a baking sheet.
4. Divide the dough into 5 pieces and roll each piece into a rectangle measuring 18x10cm.
5. Spoon a little of the anti-pasti products into the center of each and top with a little cheese.
6. Roll the bread up 'Swiss roll' style and cut into 5cm slices.
7. Place the slices on the prepared baking sheet, flat side down, to form a circle and leave to rise for 45 minutes. Set the oven to 220°C/gas 8.
8. Brush each piece with a little beaten egg and sprinkle with grated Parmesan.
9. Bake for 20 minutes.
