Method

1. Sieve the flour and salt into al large bowl. Add the yeast and olive oil, and enough water to form a smooth, pliable dough.

2. Turn the mixture onto a floured work surface and knead for 5 minutes. Return the dough to the bowl, cover with cling film and then leave to rest for 1 hour.

3. Lightly grease a baking sheet.

4. Divide the dough into 5 pieces and roll each piece into a rectangle measuring 18x10cm.

5. Spoon a little of the anti-pasti products into the center of each and top with a little cheese.

6. Roll the bread up 'Swiss roll' style and cut into 5cm slices.

7. Place the slices on the prepared baking sheet, flat side down, to form a circle and leave to rise for 45 minutes. Set the oven to 220°C/gas 8.

8. Brush each piece with a little beaten egg and sprinkle with grated Parmesan.

9. Bake for 20 minutes.
