Ross Burden rustles up an easy, elegant dessert in a jiffy with these crisp, fruit filled vol-au-vents and raspberry coulis

- 10 vol-au-vent cases
- 1 egg white, beaten
- 1 tbsp caster sugar
For the filling
- 250g fromage frais
- 250 g red berries, such as raspberries, redcurrants, strawberries
- raspberry coulis, to serve
Method
1. Set the oven to 200°C/gas 6. Make up the vol au vents, brush with beaten egg to glaze, sprinkle with caster sugar and cook for 10 minutes until golden.2. Leave to cool.
3. Fill the vol-au-vents with a little fromage frais and some berries.
4. Drizzle with coulis and serve immediately.
