String hoppers ring the changes at the table and provide a pleasant alternative to plain boiled rice. Rasheed recommends serving them with egg moilee curry
 

String hoppers

Method

 
1. Boil the water in a large saucepan and add the rice flour. Stir well to make a stiff, smooth dough.

2. Shape the dough into small balls about the size of a golf ball and place in a string hopper press. Apply pressure to the press and push the dough onto a greased banana leaf making a nest-like tangle of rice flour noodles.

3. Place the banana leaf topped with the string hoppers in a steamer and cook for 10 minutes before serving with a curry. This traditional Keralan dish works well with egg moilee.

Cooks Notes:
A string hopper press can be bought from an Indian kitchen shop.
