This chilli-spiked vodka cocktail made by A P Joseph is perfect for sultry summer days and balmy summer evenings
 

Hot and spicy cocktail

Method

 
1. Place the shallot and ginger at the bottom of a glass and bruise lightly to bring out the flavour of the ginger and onion.

2. Squeeze in the lime juice and add a generous measure of vodka. Strain the flavoured vodka into a tall, salt-rimmed glass.

3. Add the ice cubes, top with soda and stir to mix. Garnish the cocktail with a sprig of curry leaves and a split green chilli before serving.
