Fudgy chocolate pudding and creamy marshmallow sauce make sublime indulgence for a sweet tooth in this fabulous recipe from Simon Rimmer

Ingredients

main:

  • 75g raisins
  • 75 ml dark rum
  • 225g melted Butter
  • 2 Eggs, beaten
  • 30ml strong espresso coffee
  • 550ml Milk
  • 350g dark brown sugar
  • 175g self-raising flour, sieved
  • 50g Cocoa powder
  • 100g Pecans
  • 30g golden syrup

For the sauce:

  • 300ml double cream
  • 1 vanilla pod
  • 50g Sugar
  • 100 g pink marshmallows

Method

1. Set the oven to 160°C/gas3. Soak the raisins in the rum and set aside for 15 minutes. Beat the butter, eggs, coffee and 125ml of the milk together until smooth.

2. Add 225g of the sugar, the flour, cocoa, boozy raisins and nuts and stir well. Spoon into a lightly greased 1.5 litre ovenproof dish.

3. Bring the rest of the milk to scalding point. Add the syrup and stir to dissolve.

4. Sprinkle the rest of the sugar over the pudding, and then pour the syrup on top. Bake for 1 hour.

5. To make the sauce, bring the cream, sugar and vanilla slowly to boil, then simmer for about 5 minutes to thicken.

6. Remove from the heat and add the marshmallows. Stir the sauce, until the marshmallows begin to melt.

7. To serve: put a slice of pudding on a plate, and pour the marshmallow sauce on top.
