Pearl spot marinated in coriander
Method
2. Using a pestle and mortar or a food processor, pound the coriander leaves, mint, garlic, ginger, chillies and curry leaves into a smooth paste.
3. Rub this herby paste over both sides of the fish, pushing it down into the gashes. Heat the coconut oil in a frying pan and fry the fish for 5 minutes on both sides, adding a dash of water to the pan if it looks like catching.
Cooks Notes:
Lemon sole makes a good substitute for pearl spot

1 pearl spot (300g), wholejuice of 1 lime
1/2 tsp Salt
For the herb coating:
2 heaped tbsp coriander leaves2 heaped tbsp mint leaves
2 fat garlic cloves
3cm piece of fresh ginger root, chopped
2 green chillies, chopped
12 curry leaves
3 tbsp coconut oil
