Ingredients

150g caster sugar
100ml cold water
150ml double cream
2 large cooking apples, eeled and roughly chopped
2 Granny Smith apples, peeled and diced
20g unsalted Butter
a pinch of ground cinnamon
2 tbsp lemon juice, or to taste)
4 baked puff pastry tart cases
clotted cream, to serve

For the chocolate sauce:

175g plain chocolate, broken into small pieces
45ml golden syrup
45ml water
20g unsalted Butter
1 tsp vanilla extract
