These sticky-fried, honey-coated fingers from Janet Brinkworth make a great way to satisfy a sweet tooth - Russian style!

Ingredients

  • 4 Eggs
  • 2 tbsp Sugar
  • 100g icing sugar
  • 2 tsp Butter
  • 1/3 tsp Salt
  • 60ml Milk
  • 500g plain flour
  • vegetable oil, for frying

Method

1. Blend eggs, sugar and butter. Add salt, milk and flour and knead until the mixture forms a smooth dough. Leave the dough to rest for 40 minutes, and then roll out finely and cut strips 2cm in length.

2. Place the honey and sugar in a saucepan over a moderate heat and stir until the sugar is dissolved. Continue to cook until the mixture thickens and turns an amber caramel colour.

3. Heat the oil in a frying pan and fry the strips for about 5 minutes, until golden. Drain on kitchen paper.

4. Dip the strips into the syrup and arrange on a serving plate. Serve immediately.
