Ingredients
- 250g Butter
- 250g caster sugar
- 7 Eggs
- 12g Baking powder
- 355g strong bread flour
- 250g Strawberries, chopped
- zest of 3 Lemons
- 4 Plums, chopped
Method
1. Set the oven to 180°C/gas 4. Thoroughly grease 2 loaf tins. Cream the butter and sugar together in a mixer, until light and fluffy. Beat in the eggs, one at a time, and then add the baking powder.2. Add the flour and continue beating until the mixture forms a smooth batter.
3. Add the zest of the lemons.
4. Stop the machine and gently fold in the strawberries and plums.
5. Divide the mixture between the prepared loaf tins and bake for 30 minutes.
6. Serve with butter and a pot of tea.
