Simon Rimmer combines quick-to-cook squid with a host of full on flavours in this easy peasy but moreish mezze recipe

Ingredients

  • 1kg Squid
  • 50ml Olive oil
  • 2 large handfuls of Mint, parsley and basil, finely chopped
  • 2 clove Garlic, crushed
  • juice of 1 large Lemons
  • 2 red bird's eye chillies, chopped
  • Salt, nd freshly ground black pepper

Method

1. Heat the oil in a frying pan over a high heat and fry the squid for 2-3 minutes until cooked. Drain.

2. Combine the rest of the ingredients and toss with the squid.

3. Serve immediately.
