Discover just how tasty herrings can be in Anna Mosseson's quick and simple recipe for a classic Swedish fish dish
Ingredients
- 8 large sardines, illeted, scales and dorsal fins removed
- 2 tbsp Dill, chopped
- 2 tbsp Parsley, chopped
- 2 tbsp spelt flour, or dusting
- Salt, and freshly ground pepper
- 1 tbsp Butter
- dashes of Olive oil
- fried sprigs Parsley, for garnish
For the mashed potatoes:
Method
1. First cook the mashed potato. Cook the potatoes in a pan of salted water until tender; drain.2. Mash the potatoes with butter and cream and season with salt and freshly ground pepper.
3. Meanwhile, stuff two sardines with chopped dill and parsley and put the two fish together, skin side out. Repeat the process with the remaining sardines.
4. Season the flour with salt and freshly ground pepper.
5. Dust each "flounder", as the sardines it is called in Sweden, with the seasoned spelt flour.
6. Heat the butter and olive oil in a large, heavy-based frying pan. Add in the sardines and fry until golden on both sides.
7. Garnish the fried sardines with the deep-fried parsley and serve with the mashed potato.
