Method

1. Peel and slice the ginger into matchstick sized pieces. Place in a saucepan and add the oil. Very gently heat for 5 minutes, taking care not to let the oil become too hot, so it cooks the ginger.

2. Remove from the heat and leave the oil to cool.

3. Pour the cooled oil into clean bottles. Store in the fridge (it will last months).
