Simon Rimmer conjures up a deliciously comforting Indian dish - perfect as a side dish
Ingredients
- 30ml vegetable oil
- 1 tsp Cumin seeds
- 450g Potatoes, ooked, peeled and cubed
- 300ml natural Yogurt
- 300 ml water
- pinch of Turmeric
- 1 tsp Chilli powder
- 1 tsp ground Coriander
- Salt
- 1 tsp ground Cumin
- 1 tsp dark brown sugar
- handful of fresh Coriander, roughly chopped
- green chillies, to taste
Method
1. Heat the oil in a saucepan. Add in the cumin seeds and fry, stirring often, for 3 minutes.2. In a bowl, mix together the yogurt, water, turmeric, chilli, coriander, sat ground cumin and sugar.
3. Add the yogurt mixture to the frying pan, mix well, and cook for 3 minutes.
4. Add the potatoes, fresh coriander and green chillies and simmer for 8 minutes.
