Jo Pratt's lip-smacking caramelised lemons are sensational squeezed over fish, chicken, couscous or pasta and make salad dressings truly special


1. Remove any pips from the lemons and cut in half. Griddle over a high heat, cut side down, until the bases are deep golden and sticky.

2. Use straight away squeezed over fish, chicken, couscous, pasta or to make salad dressings.
