Salad of crispy Parma, two beans and croutons with walnut dressing

Crispy cooked ham and crunchy-to-bite beans combine with a wonderful walnut dressing in this rather special salad from James Martin

Ingredients

  • 10 slices Parma ham
  • 25g Butter
  • 50g bread, cut into cubes
  • 150 g mixed radicchio and Rocket
  • 100g French beans, lightly cooked
  • 100g Broad beans, lanched and peeled
  • 5 g flat leaf Parsley
  • 2 tbsp extra virgin Olive oil
  • parmesan shavings, to serve

For the dressing:

  • 2 slices white bread, roughly chopped
  • 4 tbsp Milk
  • 2 clove Garlic, peeled
  • 1 Lemon, juice and zest
  • 175g Walnuts, shelled
  • 150ml extra virgin Olive oil
  • Salt, and freshly ground black pepper

Method

1. To make the dressing, put the bread into the food blender and moisten with the milk. Add the garlic, lemon and walnuts and blend to a paste with the olive oil. Season to taste with salt and freshly ground black pepper.

2. Grill the Parma ham until crisp. Heat the butter in a frying pan and fry the cubed bread until golden brown.

3. Place the salad leaves and the cooked beans into a bowl and add the dressing. Pile the salad on to plates and top with the crispy ham, croutons and scatter with parsley.

4. Drizzle with the olive oil and top with Parmesan shavings
