Method
2. Just before serving whisk the egg whites into peaks, then do the same with the cream. Fold them into the egg yolk mix and pour it into a large jug. Add a grating of nutmeg over the top and serve.
Cooks Notes:
Raw or lightly cooked eggs should not be served to young children, elderly people, invalids and pregnant women, because of the risk of salmonella poisoning.
