JACKFRUIT - 'Praise the lord for people with brains!' enthuses Nancy. 'They've started packing this fruit into tins and you can buy it at Oriental Supermarkets. Think peach, pear and apricot and you've got the taste of jackfruit!
Ingredients
For the honey dip:
- 4 tbsp clear Honey
- juice of 1 limes
For the batter:
- 250g rice flour
- ¼ tsp Salt
- 250 ml ice cold water
Method
1. Slice the fruits.2. To make the honey dip, simply mix the honey and lime juice together. Set aside.
3. Sieve the flour and salt into a mixing bowl and add the water. Whisk vigorously until the mixture forms a smooth batter.
4. Add the fruits to the batter (adjust the quantity of flour or water slightly if the batter seems a little too thin or thick).
5. Heat the oil in a wok over a high heat and fry the battered fruit slices a few at a time until golden brown. Drain on kitchen paper and serve immediately with the honey dip.
