Parmesan lamb cutlets with sautéed ceps
Method
2. Add 2 tablespoons of olive oil to bind, season well and set aside.
3. Heat 2 tablespoons of oil in a large frying pan and fry the lamb cutlets for about 1 minute each side until lightly coloured. Transfer them immediately to a rack and leave to cool.
4. Once they are cool, dust the cutlets with flour; roll in the beaten egg then finally in the crust. The lamb cutlets can be prepared to this point at least two to three hours in advance.
5. When you are ready to serve, heat a further 2 tablespoons of oil in a frying pan and fry the cutlets for two minutes each side. Once well browned, transfer the lamb to a warmed plate.
6. Pour the lamb stock into the pan and reduce by half. Season well and keep warm.
7. While the lamb is cooking, heat a large heavy frying pan with the remaining olive oil.
8. Add the ceps and leave them for about two minutes until they brown lightly.
9. Turn the ceps and fry them for a further minute until they are well coloured.
10. Next add the unsalted butter and toss the mushrooms in it for about a minute. When the butter is foaming nicely, add the garlic and sweat it without colouring it for about 30 seconds and add the flat leaf parsley.
11. Toss this in well; season the ceps with salt and freshly ground black pepper.
12. Serve the lamb on top of the ceps surrounded by the sauce.

12 lamb cutlets, trimmed and flattened slightlyFlour, for dusting
1 egg
400ml lamb stock
2 tbsp Olive oil
For the crust:
50g dried bread8 stalks of flat-leaf parsley, leaves picked from the stalks and chopped
50g Parmesan, grated
6 tbsp Olive oil
For the ceps:
600g cèpe mushrooms50g unsalted Butter
1 garlic clove, finely chopped
flat-leaf parsley, leaves picked from the stalks
salt and fresh ground black pepper
