Ingredients

  • 700g Potatoes, peeled and cut into chips
  • vegetable oil, for deep-frying
  • Salt
  • mayonnaise, for serving

Method

1. Pat the potato chips dry with a clean, dry tea-towel.

2. Heat the oil for deep-frying in a wok or deep fat-fryer until medium hot, 160°C if using the fryer.

3. Add in the chips and fry for 5-6 minutes, removing them with a slotted spoon before they colour. Set aside to cool.

4. Heat the oil for deep-frying until extremely hot. Add in the chips and fry for 3 minutes until crisp and brown.

5. Pat the chips dry with a clean, dry tea-towel. Season with salt.

6. Serve with mayonnaise.
