Fourme au sauternes (fourme with sauternes)

For a sophisticated pre-dinner nibble try Patricia Michelson's dangerously more-ish blue cheese dip
Ingredients
- 200 g Fourme d'Ambert blue cheese
- Sauternes, to mix
To serve:
Method
1. Place the Fourme d'Ambert in a bowl. Mix in enough Sauternes to make a thick dripping paste.2. Cover the bowl tightly with cling film and refrigerate for 2 days.
3. Mix thoroughly and serve with wafer cheese biscuits, celery sticks and cucumber as a dip with pre-dinner drinks.
