This boozy, egg laced hangover cure from Salvatore Calabrese is aptly named!!

Eye opener (hangover cure)

Method

1. Pour all the ingredients into a cocktail shaker with ice. Shake.

2. Strain into a cocktail glass and serve immediately.

Cooks Notes:
This is an old recipe and will certainly open your eyes wide in an instant. Absinthe makes the eyelids stronger; don't have too many though, or they'll remain open permanently.

Raw or lightly cooked eggs should not be served to young children, elderly people, invalids and pregnant women, because of the risk of salmonella poisoning.

2 dashes of Absinthe
2 dashes of orange curacao
2 dashes of crème de Nayau or Amaretto
30ml rum
1 tsp caster sugar
1 free-range egg yolk
