Pumpkin mashed with nothing more than luscious, nutty pumpkin oil and a little seasoning makes a real treat from Janet Brinkworth

Ingredients

  • 1 pumpkin, peeled and diced
  • pumpkin oil
  • black pepper

Method

1. Boil the pumpkin in plenty of slightly salted water. Drain it, and then mash it up.

2. Next you need to pass it through the sieve. Remember pumpkin is 90% water, and you've just cooked it in water, so this step is necessary if you don't want a horrible soggy mess.

3. Then take some pumpkin oil and add a liberal slug. Stir it into the mash and reheat.

4. Season well and serve with extra pumpkin oil. Curiously, the oil will appear to turn from brown to green as it spreads.
