Simon Rimmer's juicy pork chops with fried apple in a creamy curry sauce couldn't be easier to prepare

Ingredients

  • 3 Cox's Apples
  • squeeze of lemon juice
  • 2 pork chops, weighing 150g each
  • 30g Butter
  • 2 tbsp Onions, finely diced
  • 1 clove Garlic, rushed
  • 2 tsp Thyme, leaves only
  • good pinch of curry powder
  • 2 tbsp Calvados
  • 100ml cider
  • 125ml double cream
  • black pepper

Method

1. Toss the apple slices in lemon juice.

2. Preheat the grill to hot.

3. Season the chops with salt and pepper. Place under the grill and grill for about 5 minutes on each side.

4. While the chops are grilling, melt the butter in a large heavy-based frying pan over medium heat. Add the onion, garlic and thyme and fry for 2-3 minutes until soft.

5. Add the apple slices to the pan. Season with curry powder and fry, stirring, for 5 minutes.

6. Raise the heat a little, add the calvados and ignite. When the flames have died down, add the cider and simmer until reduced by about a quarter.

7. Pour in the cream and simmer again for a few minutes until reduced.

8. Finally add the pork chops and cook for 2-3 minutes more. Serve at once.
