Apple and mint add a delicious flavour to tasty, home-made pork burger in Sian Blunos's simple recipe

Ingredients

  • 150g Apples, peeled, cored and roughly chopped
  • 1 tbsp fresh Mint, shredded
  • 1 tbsp Parsley, shredded
  • 1 small Onion, peeled
  • juice of ½ Lemons
  • 450g minced pork
  • 50g breadcrumbs
  • Butter, or vegetable oil for frying

For the pea and mint dip:

  • 225 g frozen Peas, defrosted
  • 1 tbsp Parsley, chopped
  • 2 tsp mint leaves, chopped
  • juice of ½ Lemons
  • 1 tsp Sugar
  • 100g cream cheese
  • 1 small Spring onion, chopped
  • black pepper

Method

1. Put the apples, mint, parsley, onion and lemon juice in a food processor and blend to a rough puree.

2. Add the pork and breadcrumbs and blend again until smooth. Shape the mixture into 8 or 9 small burgers.

3. To cook, heat some butter or vegetable oil in a large, heavy-based frying pan and fry the burgers for 3 to 4 minutes each side until cooked through.

4. To make the pea and mint dip, place the peas, parsley, mint, lemon juice, sugar, cream cheese and spring onion in a food processor and blend until well mixed. Season with salt and freshly ground pepper.

5. Serve the freshly fried burgers with the pea and mint dip.
