Pork, apple and mint burgers with pea and mint dip

Apple and mint add a delicious flavour to tasty, home-made pork burger in Sian Blunos's simple recipe
Ingredients
- 150g Apples, peeled, cored and roughly chopped
- 1 tbsp fresh Mint, shredded
- 1 tbsp Parsley, shredded
- 1 small Onion, peeled
- juice of ½ Lemons
- 450g minced pork
- 50g breadcrumbs
- Butter, or vegetable oil for frying
For the pea and mint dip:
- 225 g frozen Peas, defrosted
- 1 tbsp Parsley, chopped
- 2 tsp mint leaves, chopped
- juice of ½ Lemons
- 1 tsp Sugar
- 100g cream cheese
- 1 small Spring onion, chopped
- black pepper
Method
1. Put the apples, mint, parsley, onion and lemon juice in a food processor and blend to a rough puree.2. Add the pork and breadcrumbs and blend again until smooth. Shape the mixture into 8 or 9 small burgers.
3. To cook, heat some butter or vegetable oil in a large, heavy-based frying pan and fry the burgers for 3 to 4 minutes each side until cooked through.
4. To make the pea and mint dip, place the peas, parsley, mint, lemon juice, sugar, cream cheese and spring onion in a food processor and blend until well mixed. Season with salt and freshly ground pepper.
5. Serve the freshly fried burgers with the pea and mint dip.
