Martin Blunos makes a little magic with mackerel fillets in a crisp-crunch coating and tangy buttermilk dressed salad leaves
Ingredients
- 4 mackerel fillets
- cayenne pepper
- black pepper
- 2 tbsp clarified butter, (ghee)
- 2 tbsp Olive oil
- 3 tbsp fine oatmeal
For the dressing and salad:
- 300ml cultured Buttermilk
- 1 tbsp Dijon Mustard
- 1 tbsp Cider vinegar
- 1 tsp caster sugar
- mixed salad leaves
To serve:
Method
1. Season the mackerel with cayenne and salt and press the fillets into the oatmeal.2. Heat the butter and oil together in a frying pan over a medium heat and fry the fillets gently for 3-4 minutes on each side.
3. While the fish is cooking, mix together the buttermilk, mustard, vinegar and sugar. Season to taste with salt and freshly ground black pepper.
4. To serve, arrange the salad leaves on each of 4 plates and place a mackerel fillet alongside, squeeze over a little lemon juice, sprinkle with parsley and serve immediately.
