Apple turkey burgers with devilishly hot spicy salsa

Tonia Buxton's turkey burgers are light, tasty and low in fat. A palate-awakening tomato salsa provides a zesty accompaniment

- If you prefer, serve the salsa hot or warm instead of chilled.
For salsa with an extra kick, include the seeds from the chilli.
Ingredients
- 500 g minced turkey
- 2 large clove Garlic, crushed
- 1 large Onion, finely chopped
- 2 Apples, grated or finely chopped
- 3 tbsp Parsley, chopped
- 1 tbsp ground Cinnamon, (optional)
- 1 tbsp Olive oil
- 4 ciabatta rolls, halved horizontally
- 100g halloumi cheese, sliced horizontally into 4
- freshly ground salt and black pepper
- salad leaves, to serve
For the salsa:
Method
1. First make the salsa. Heat the oil in a saucepan over medium heat. Add the onion and gently fry for about 5 minutes until soft.2. Stir in the remaining ingredients. Cover and bring to the boil. Reduce the heat and simmer, covered, for 10 minutes.
3. Allow to cool then put in fridge to chill.
4. Preheat the grill.
5. Put the turkey, garlic, onion, apples and parsley in a bowl and mix thoroughly. Add the cinnamon, if using, oil, and salt and pepper to taste. Divide into four burgers.
6. Lightly toast the rolls. Keep them warm while you cook the burgers.
7. Place the burgers on a rack in a grill pan. Grill for 5-6 minutes on each side until thoroughly cooked through.
8. Place a piece of haloumi on each burger. Grill for a minute or two more or until the cheese has melted.
9. Serve the burgers on the warm rolls with a large helping of salsa and some salad leaves.
