Buttery macadamias make a nutty but nice crumble to top lightly spiced pears, in this delicious dessert from Curtis Stone

Ingredients

  • 8 Williams pears, cored and quartered
  • 100g Sugar
  • zest and juice 1 Oranges
  • 1 cinnamon stick
  • 1 vanilla pod

For the topping:

  • 275g plain flour
  • 125g Butter
  • 125g Sugar
  • 100g macadamia nuts, roasted and crushed

Method

1. Place the pears, sugar, orange juice and zest, cinnamon and vanilla pod in a saucepan and cook over a moderate heat for 20 minutes, or until the pears collapse and become mushy.

2. Set the oven to 170°C/gas 3. To make the crumble, place the flour, butter, sugar and macadamia nuts in a large bowl and rub the mixture together with your fingers until the mixture resembles coarse breadcrumbs.

3. Pour the pear mixture into an ovenproof dish and sprinkle over the topping. Bake for 15 minutes or so, until golden brown. Serve with vanilla ice cream.
