Simple mint butter adds a special touch to peas and broad beans in this quick, easy side dish from Paul Rankin

Method

1. Cook the beans and the peas in separate pans, in plenty of boiling salted water for about 3 minutes.

2. Drain and stir in the butter and chopped mint. Season to taste with salt and freshly ground black pepper and serve immediately.
