Simple mint butter adds a special touch to peas and broad beans in this quick, easy side dish from Paul Rankin
Ingredients
- 250g Peas
- 250g Broad beans
- 2 tbsp Butter
- ½ tbsp Mint, finely chopped
- black pepper
Method
1. Cook the beans and the peas in separate pans, in plenty of boiling salted water for about 3 minutes.2. Drain and stir in the butter and chopped mint. Season to taste with salt and freshly ground black pepper and serve immediately.
