Roasted sweet plantains

Method

 
1. Preheat the oven to 200°C/gas 6. Place the plantains in their skins on a baking sheet or in a roasting pan and allow to roast for 20-25 minutes, or until soft but not mushy.

2. Remove from the oven, split the skins and serve immediately.

Cooks Notes:
Plantains are a firm variety of banana that needs to be cooked before eating. Green plantains feature in many cuisines, fried or boiled and used very much like potatoes; ripe plantains turn yellow then black, and are good roasted or fried.
