Chocaholics will love Paul Hollywood's recipe for home-made chocolate muffins, generously filled with chocolate chips and pieces of chocolate

Ingredients

  • 250g Butter
  • 190g caster sugar
  • 4-5 Eggs
  • 250g strong bread flour
  • 20g Baking powder
  • 60ml Milk
  • 100g chocolate chips
  • 150g drinking chocolate
  • 20 squares of dark chocolate, 70% cocoa solids

Method

1. In a mixing bowl, cream together the butter and sugar with a wooden spoon until white and fluffy.

2. Add in the eggs, one at a time, mixing well with each addition, and whisk together for 5 minutes.

3. Sift the flour and baking powder, add to the butter mixture and fold together until well-blended.

4. Add in the milk and the drinking chocolate and mix for 1 minute. Fold in the chocolate chips.

5. Refrigerate the mixture for 2 hours.

6. Preheat the oven to 200°C/gas 6.

7. Line muffin trays with paper cases, making 20 muffin cases in all.

8. Place a teaspoon of the muffin mixture in each case. Top each case with a square of chocolate, then add another teaspoon and a half of the muffin mixture on top.

9. Bake the muffins for 15-20 minutes until cooked through and risen. Remove and serve warm from the oven.

I have just made these muffins with my son and we didnt refrigerate the mix and we used normal SR flour and we also used dairy milk instead of plain choc. They have come out lovely the best muffins we have ever made. So i'm not sure if they would have been better if I had refrigerated them as they were gorgeous anyway.

instead of strong bread flour can this be made using plain all purpose flour ?

what happens if you dont refrigerate them for 2 hours?

made this and put dairy milk in centre, they were divine, even the taxi driver taking us to the party took one, everyone said they were the best ever!!!!! yum yum yum

OMG! These were amazing! They looked shop bought and tasted divine. We used blobs of hersheys choc 'n' nut and cadburys milk chocolate instead of the 20 bits of dark chocolate with mouthwatering results. A recipe!
