Method

1. Preheat the oven to 180°C/gas 4.

2. In a large mixing bowl break in the eggs and add the oil. Whisk thoroughly for 5 minutes.

3. Add the caster sugar and beat for a further 3 minutes.

4. Fold in the flour, baking powder, cinnamon, salt, grated courgettes, vanilla essence and walnuts, mixing well.

5. Pour the cake mix into 2 greased and lined 900g loaf tins, dividing it evenly between the two.

6. Bake for 1 hour until risen and golden. Serve it warm or cold in slices with butter.

We had a glut of courgettes at home and needed something to do with them - thank you - this is the best cake we have tasted in a long time and the dog loves it too!

I'm sorry but this has to be one of the worst recipes I've ever made! Alarm bells should have rung when I clocked the quantity of sugar and flour needed. You need a washing up size bowl to mix it (why such a large recipe?) so I'd recommend halving it all if this is your first attempt. The final cake produced is *very* heavy and stodgey and I'm annoyed that I've wasted such a large amount of ingredients making this. I won't be trying it again.
