Mini C's perky pork recipe is chock full of fabulous flavours - and ready in a flash

Ingredients

  • 200g pork, finely sliced
  • 1 tsp Fish Sauce
  • black pepper
  • 1 tsp caster sugar
  • 2 tbsp Olive oil
  • 100ml chicken stock

For the garlic and coriander paste:

  • 3 cloves Garlic, crushed
  • small bunch of coriander roots

Method

1. Using a pestle and mortar, pound the garlic and coriander root together until the mixture forms a paste.

2. Place the pork fillet in a large bowl and mix thoroughly with the garlic and coriander paste. Stir in the fish sauce and sugar and season with a little salt and freshly ground black pepper.

3. Heat the olive oil in a wok over a high heat and stir-fry the pork until cooked through, adding a little chicken stock if the pork is becoming too dry. Turn the pork out into a dish and serve immediately with rice.
