Pan-seared chorizo sausage with balsamic roasted cherry tomatoes

Serve up a stylish starter in a matter of minutes with James Tanner's recipe combining chorizo with sweet cherry tomatoes
Ingredients
- 250g cherry tomatoes
- 4 tbsp Balsamic vinegar
- 2 tbsp Olive oil
- 1 tsp chopped Thyme
- black pepper
- 4 slices of chorizo sausages
Method
1. Preheat the oven to 200°C/gas 6.2. Place the cherry tomatoes in a roasting tray. Toss with 2 tablespoons of balsamic vinegar, olive oil and thyme and season with salt and freshly ground pepper.
3. Roast for 5-10 minutes, until softened.
4. Heat a heavy-based, non-stick frying pan over medium heat until hot. Add the chorizo to the pan and sear for 1 minute on each side.
5. Divide the roast tomatoes and seared chorizo among four serving plates. Drizzle the remaining balsamic vinegar around each portion and serve.
