Apple and date chutney makes a fantastic ploughman's style supper. Just add a large chunk of Denhay farmhouse cheddar, some great bread and a glass of beer!
Ingredients
- 25g Butter
- 1 large red Onion, cut into wedges
- 150ml Beer
- 1 Bay leaves
- 3 tbsp Balsamic vinegar
- 2 Apples
- 100 g large raisins
- 200g Dates, roughly chopped
- black pepper
- Denhay farmhouse cheese or cured meats, to serve
Method
1. In a large frying pan, heat the butter over a low heat and cook the onion until softened and golden brown.2. Stir in the sugar, beer, bay leaf, balsamic, apples, raisins and dates. Cover and cook for 15 to 20 minutes until the apples and fruit have softened. Then remove the lid and cook uncovered for a further 5 minutes, until slightly reduced. Season to taste with salt and freshly ground black pepper and serve warm or cold with Denhay farmhouse cheese or cured meats.
