225g plum tomatoes2 tbsp baby capers, rinsed
2 tbsp large raisins, halved
1 shallot, finely chopped
2 tbsp thyme leaves
30g toasted pine nuts
juice of 1/2 lemon
3 tbsp extra virgin olive oil
salt and fresh ground black pepper
8-12 slices Denhay air-dried ham, to serve
