Home-made lavender sugar adds a delicious and subtle fragrance to shortbread biscuits in Gioconda Scott's appealing recipe

Ingredients

  • 115g Butter, softened
  • 55g lavender sugar
  • 150g plain flour, sifted

Method

1. Preheat the oven to 150°C/gas 2.

2. In a mixing bowl, using a wooden spoon, cream together the butter and sugar until thoroughly blended.

3. Add the flour and mix in with your fingers into a soft dough.

4. Place the dough on a floured working surface and flatten down to 3mm thickness.

5. Using a biscuit cutter cut into shapes.

6. Place the shortbread shapes on a baking sheet lined with baking parchment.

7. Bake for 20-30 minutes until pale golden and set. Remove, cool on a wire rack and store in an airtight tin until serving.

I made Lavender sugar by putting six lavender flower heads (pick them on a dry day) in a jam jar with 100g of caster sugar and leaving it for a few days to allow the sugar to take up the aroma. If you want to have flowers in the shortbread, just strip a few of the heads. Looks pretty. A very good reason to have lavender in your garden or just buy a small plant for the window sill.

i bought some lavender suger yesterday and i got it from waitrose hope this helps it cost 2.99 for a fairly big jar

Found a French lavender sirop in Conran's Bluebird supermarket Kings Road London cost about £4. Hope this helps

Bought some in South Africa! Haven't seen it in the uk. Looks like ordinary sugar with lavendar flowers only added to it

How do you make or where do you buy lavendar sugar. For years I have been trying to get lavender essence to use in a chocolate fondant recipe I have without sucess. When I spotted the lavender shortbread I thought I might have cracked it! However, no instruction included in recipe to obtain the lavender sugar. Please Help!!!!
