Emma Sharp shows how to make tasty traditional Jamaican baked bean and sausage toasted sandwiches in a jaffle iron set in an open fire

Ingredients

  • 12 slices white bread
  • 50g Butter
  • 6 Eggs
  • 1 can of baked beans
  • 1 can of small Vienna Sausages

Method

1. Make an outside fire and wait until the coals are hot.

2. Spread one side of all twelve slices of bread with butter. Place 2 slices of bread, buttered side down, on the jaffle iron. Crack an egg in the middle of one slice, add a large spoonful of baked beans on top. Close up the waffle iron and stick in the fire for a couple of minutes. Turn and cook for another couple of minutes. Serve immediately.

3. Make two more toasted sandwiches the same way and then another 3 more replacing the baked beans with chopped-up sausages.
