Banana and date pudding

Method

 
1. Preheat the oven to 180°C/gas 4.

2. Place the dates, water and bicarbonate of soda in a saucepan over a medium heat and cook for 5 minutes, until soft. Meanwhile, grease a 28 x 18cm baking dish with butter.

3. Cream the butter and sugar together in a mixing bowl. Add the eggs and mix well. Fold in the softened dates, flour and vanilla extract, then the chopped bananas.

4. Spoon the mixture into the prepared baking dish and bake in the preheated oven for 40 minutes.

5. A few minutes before the pudding is ready, start making the sauce. Place the sugar, butter and cream in a saucepan and bring to the boil.

6. Remove the sauce from the heat and fold in the bananas.

7. Serve the pudding hot with the banana cream sauce.

Ingredients

225g Dates
400ml water
1½ tsp Bicarbonate of soda
75g Butter, plus extra for greasing
225g Sugar
3 Eggs, beaten
225g self-raising flour
few drops of vanilla extract
6 bananas, chopped

For the sauce:

100g Sugar
100g Butter
100ml double cream
2 bananas, finely chopped
