Karango with irio (beef stew with bubble and squeak)

Moist and moreish, this slow cooked beef from Mike Robinson is terrific teamed with Bubble and Squeak!
Ingredients
- 3 tbsp Olive oil
- 200 g cubed beef
- 2 Onions, finely chopped
- 2 cloves Garlic, finely chopped
- 2 Tomatoes, chopped
- 1 tsp Ginger, chopped
- 1 tsp tomato purée
For the bubble and squeak:
Method
1. Heat the oil in a large saucepan over a medium heat and cook the beef until brown.2. Add the onion, garlic, tomatoes, ginger and tomato puree.
3. Seal with a lid and cook over a very low heat for 1 hour, or until the meat is tender.
4. Meanwhile, make bubble and squeak. Heat the oil in a frying pan over a medium heat and fry the onion until soft. Add the coriander, kale, beans and sweetcorn.
5. Add the mashed potato, season with salt and freshly ground black pepper and work into the rest of the ingredients. Cook for 4-5 minutes, until heated through. Serve with the beef stew.

Perfect stew. If using a braising beef I suggest cooking it for at least 90 minutes. I also added a diced green pepper, a tspn of brown sugar, a pinch of cayenne pepper and cinamon and a tspn of curry powder
