Moist, citrus scented chicken makes the perfect Sunday lunch in this simple but delicious recipe from James Thompson

Ingredients

  • 2 limes, cut into quarters
  • 4-6 whole cloves Garlic
  • large handful of Thyme, leaves only
  • 2kg chicken
  • juice of 1 Lemons
  • black pepper
  • 3 tbsp Olive oil

Method

1. Set the oven to 200°C/gas 6. Push the lime quarters, whole garlic cloves and thyme into the cavity of the chicken.

2. Place the chicken into a roasting pan and drizzle the lemon juice over. Season well with salt and freshly ground black pepper. Drizzle with olive oil and roast for 2 hours.

such an easy recipe and it tasted lovely. just fell off the bone. i did cover for 1 1/2 hours then took the foil off to crisp, utterly divine. nice and lemony fresh. will definitely do this recipe again.

made for mothers day yesterday and it was so easy and tasted great fell off the bone and the smells of the fruit and garlic while it was cooking was wonderful.

The nicest chicken i ever made, i cut the skin and the meat fell off the bones. Highly recommended

this was lovely and moist and had lovely flavours and made a change to just roasting
